Holiday Catering Menu

Our Holiday Menu is listed below with some of our traditional bbq items, as well as some of our families most cherished recipes. Everything can be purchased a la carte with a $500 minimum, or in packages for groups of 25 or more.

Buffet service starts at $150/hr with a 2 hour minimum and includes tables for the buffet, linens, silver and gold roll top chafers, decor, and staff to stock the buffet for the duration

Two Meats / Two Sides/One salad: $25.00/pP

Three Meats / Three Sides/two salads: $34.00/pp

Four Meats/Four Sides/three salads: $39.00/pp


House Salad: Field Greens, Cherry Tomatoes, Croutons, and Finely Diced Red Onion. Served with Italian, French, and Ranch Dressing


Bacon and Blue Broccoli Salad: Broccoli tossed in a light creamy house made dressing, blended with small bites of bacon, bleu cheese crumbles, and red onion. A fan favorite!


Cranberry Almond Spinach Salad:  Baby Spinach layered with slivers of toasted almonds, and cranberries. Served with a house made slightly sweet and tangy sesame seed vinaigrette.


Spinach & Tortellini Pasta Salad: Tri-Color Cheese Tortellini, served cold, with Spinach, and beautiful red cherry tomatoes. Tossed in Italian dressing and our blend of spices.


Cucumber & Tomato Salad: Chef Nikki’s favorite, a fresh cold salad of cucumbers, tomato, fresh herbs, seasonings, and her secret vinaigrette. It’s a refreshing side to any dish!


Cool Ambrosia Salad: Sweet Pineapple, Mandarin Oranges, and Cherries in a sweet creamy mixture. Garnished with Coconut Flakes, Served Cold.



Side Dishes  

Southern Collard Greens: Slow Cooked w/ Homemade Chicken Stock, Red Bell Peppers, Onions, Garlic, and Smoked Turkey Legs & Wings.


Sautéed Garlic & Kale: Fresh Kale sautéed in hot olive oil, steamed with vegetable stock, red pepper flakes, and fresh garlic.


Reshee’s Mac & Cheese: Home style elbow macaroni blended in a buttery seasoned mix, baked with Colby Jack, Sharp Cheddar, Monterey Jack, & Muenster (contains milk, butter, eggs and seasonings).


Roasted Parmesan Broccoli: Broccoli, lightly grilled, brushed with butter, garlic, and covered with aged-parmesan cheese.


Roasted Corn Cob-Ettes: Roasted Buttery Mini Corn Cob-Ettes, brushed with Garlic Butter, garnished with parsley.


BBQ Baked Beans: Beans slow cooked in home made chicken stock, seasoned with honey and brown sugar, bacon, and spices. (Ground beef is optional).


Rice & Gravy: A Traditional side dish in our home, steamed white rice served with a made from scratch Brown Gravy.


Aunt Mary’s Black Eyed Peas: With their distinctive flavor, these Southern Style Beans are slow cooked in our house made chicken stock with smoked turkey and turkey sausage, onions, garlic, and seasonings. Served with White Rice.


Mama’s Red Beans & Rice: A New Orleans Native, this authentic recipe of Savory Red Beans slow cooked with Smoked Turkey, and Turkey Sausage, Onions, Peppers, and Garlic.  A Must Try!


 Mama Janice’s Cornbread Dressing:  A cornbread dressing made with onions, bell pepper, delicious golden mushroom gravy, chicken giblets, and butter. Baked until golden brown, this dressing is amazing! (Add $1.50/pp).




Beef Brisket: Our best seller! We marinate our briskets for 24-48 hours in our custom spice blend, and smoke it at a low, slow 225 degrees for 9-12 hours over seasoned wood. It is Truly Delicious! (Add $3/pp.)


Traditional Baked Turkey: Brined and seasoned, then rubbed down with an herb butter, and baked until golden brown.


Smoked Turkey: A delicious bird, seasoned and smoked over apple wood for 5-6 hours. These birds come out a gorgeous mahogany color, teeming with smoke flavor, a perfect alternative to the traditional turkey.


Chef Nikki’s Smoked Holiday Ham: This ham is wet brined for 4 days, then smoked over hickory wood, and basted with a bourbon honey glaze until done. This ham option also comes traditionally baked. Just ask!


Smoked Pulled Pork: We smoke our pork shoulders for up to 12 hours or until we get that dark bark, and the bone falls out. This delicious pork is pulled, and mixed with our made from scratch barbecue sauce (Buns can be provided upon request for $1/pp).


Baby Back Ribs: Tender Baby Backs, rubbed down with our custom blend, sweet + heat. Smoked for 4 hours over seasoned wood, then coated with our house made bbq sauce. It’s delicious all year round! (Add +2/pp.)


Beef Ribs: These HUGE Meaty Ribs get marinated in our special garlic marinade for 48 hours, and then smoked. These ribs are HUGE and delicious!  (Add +$3/pp).


Dinner Rolls and bbq sauce are included.
